There is more to selecting menu items than just choosing your favorite types of food.Of course,the most important consideration in creating a menu is the customer.you must first determine who your customer are ,what they want and how to attract them. To profitably serve them you must also consider your operation’s target margins,sales potential,and price points.Additionally,you must look at the marketing enviroment in which a restaurant operates including competition,pricing,consumer,and industry trends and brand image. Taking these factors into account,you must then determine how an operation can effectively produce the menu items it wants to offer. |
